A Very Raw Christmas
Before too much time goes by, I’d like to tell a Christmas story. For Jewish vegan raw food enthusiasts. On Christmas day, we twiddled our thumbs and thought about going out to a Chinese restaurant. But no - St. Chanuklaus tapped me on the shoulder and in his thick Yiddish accent, said, “Vat - ah yu cvazy? Dis is your chance to shine, bubbeleh. Soak dose sun-dlied tomatoes and gif dem a feast dey von’t fugget!”
And so the Lord spoke. I concocted a raw food feast that even my father liked. And he doesn’t like anything. Collard-wrapped vegetable rolls filled with avocado, tomato, cucumber, carrots, mango and brazil nut-garlic crumbles. Pizza - yes - pizza for Christmas! - a merry carrot flax seed cracker crust topped with ho ho homemade marinara sauce, cashew ricotta, red onions, spinach, pineapple and sprouts. And the pièce de resistance, a chocolate coconut creme pie made of coconut, vegan chocolate chips, dates, coconut butter and lecithin and vanilla.
And I didn’t even have to slide down the chimney to deliver it.
